About National Dish Recipes

Axel Mammitzsch, founder of National Dish Recipes

Hi, I’m Axel Mammitzsch, and this is my website. I’m based in Dresden, Germany, and I run National Dish Recipes as a small independent publisher under my own name (see the imprint for the full details).

Why this site exists

Every country has a dish it calls its own: Sauerbraten in Germany, jollof rice in Nigeria, pad thai in Thailand. I wanted one place where you can find the national dish of every country in the world and then actually cook it at home, without hunting through dozens of tabs.

What started as a German recipe collection on our sister site nationalgerichtrezepte.de became this English edition in summer 2026. Today it holds more than 20,000 recipes from 194 countries, grouped by continent and country.

About me

I trained as a computer scientist in 2001 and have worked in IT for more than 20 years, most of that time as a freelancer helping small businesses with their websites, marketing and technology. I am also the author of several technical books and video courses on topics like the Mac, Raspberry Pi, 3D printing and AI, which more than 12,500 students have taken so far.

How the recipes are put together

  • Every recipe follows the same clear structure: ingredients, step by step instructions, substitutions, dietary alternatives, serving ideas and a little history of the dish.
  • The recipes are based on our German collection and were translated and adapted for English speaking home cooks.
  • The dish images are illustrations of how the finished dish typically looks. They are not photos of one particular plate, so your result may look a little different, and that is fine.
  • If you spot a mistake, a wrong ingredient or a dish that is made differently in its home country, please tell me and I will correct the recipe.

How the site is funded

National Dish Recipes is free to use. It is financed by advertising and, in some articles, by clearly marked affiliate links. This never changes which dishes I write about. Details are in the privacy policy and the disclaimer.
